Happy day before Gobble Gobble Day!

Happy Wednesday, y'all!

Since this is the day before Thanksgiving, I will spend a lot of time cooking today. Today is pie day for me...only 3 this year! hehe I also do as much ahead as I can, so that I can actually enjoy the day with the family tomorrow! Dh does the bird and I do the sides. I love it that way, too!

I am sure I will not be on too much over the next couple days, as thankfully dh has off until Monday. So, for those that celebrate Thanksgiving in the US tomorrow, please have a wonderful, blessed holiday and holiday weekend. Until next time ...

May your turkey plump,
May your potatoes and gravy have nary a lump.
May your yams be delicious
and your pies take the prize,

Salsa Shredded Chicken Tortilla Filling


First of all sorry for the lame photo...chicken is not the most compliant of photo subjects and it was really dark, and my light bulb burned out and yea... just not the greatest of photos! lol


6 chicken breasts
1 jar salsa, approx 15 oz
approx 15 oz tomato sauce
2 1oz pckts taco seasoning
1 1/2 tsp ground cumin
4 cloves of minced garlic, or 2 tsp preminced
2 tsp chili powder
1 c water
optional - cayenne to taste

This is so easy and the girls love it. You just put everything in the crock pot, let cook on high for 4 to 5 hours, then shred the chicken and spoon over as much of the juice from the crock pot as you want to incorporate. Then use it for wraps with some sour cream, cheese, etc.
